Piddle Apple Cake

8oz Self raising flour

4 oz Margarine

12 oz Lord Derby Cooking Apple  or another apple that ‘pulps’ on cooking

4 oz Sugar (less if you like)

2oz Raisins or Sultanas

A little Milk

 

Rub fat into flour, add sugar,  raisins/sultanas

Peel,core and dice apples  , add to flour mix

Combine adding enough milk to make a stiff mix

 

I cook mine in 2  -  7” sponge tins  or use a 9” diameter dish say 2” depth  for a deeper cake

 

The Mixture is lumpy  and a bit sticky so difficult to get a smooth finish before cooking  - however cooking sorts out the levels !

 

Cook 180 C  or  Gas Mark 4   for around 25/ 30 minutes until a knife comes out clean. The deeper one takes a little longer.

 

Either eat cold like a cake    or serve warm with maple syrup and cream  or ice cream  (or other healthy alternatives - yoghurt /creme faiche/fromage frais etc)
