Red Cabbage

Braised Red Cabbage

 

Good with mashed potato and sausages, with pork /boiled bacon or for us vegetarians with potato, cheese and onion pie -

Keeps well - for reheating the next day - actually matures its flavour!

 

Slice a small/medium red cabbage rinse and drain

Saute 1 medium onion in oil until just starting to soften

Add a sliced and chopped  large apple to onions

Add ¼ pint cheap red wine or stock

1 tablespoon cider vinegar

4 or 5 cloves

½ teaspoon nutmeg

Good grating of black pepper

Add the sliced cabbage

 

Stir well - put lid on and simmer for about 45 mins   until tender - stir occasionally.  Or put into a casserole dish with lid and put in oven for 45/60 mins .  

You may want to stir in 1 tablespoon of brown sugar  before serving .
